Day 1: Arrival
Met my incredible Climate Farm School fam at Metabee Farm in Hillsdale, NY and got settled into our spaces for the week. I decided after experiencing a couple camping trips, I could totally camp outside for 8 days, and I truly had a blast. Setting up my tent went smoothly which set the tone for the rest of the week. Once settled, we got together to introduce ourselves and enjoy some charcuterie on the back porch, the vegan options were incredible and Iām not even a vegan!
The first ice breaker included describing what vegetable you resonated with and for some reason butternut squash instantly came to mind for me. Something about the versatility of butternut squash and probably the season it is harvested in made it seem like the perfect vegetable to describe me. Similar to the butternut squash I have the ability to adapt to different environments and I was born in the fall. The group introduced each other and talked about what brought us on this crazy journey to meet with 8 strangers in the Hudson Valley.
After breaking the ice, we collectively went out on a little discovery walk before dinner and stumbled upon the small garden on the grounds. I was in awe of all of the greenery and beautiful vegetables in the garden, immediately my mind was filled with the possibilities. Dinner was so lovely this night, exactly what we needed to warm up to each other. We catered from @talbottandarding, such delicious picks (sandwiches, turnip and greens, beans, meatballs, pasta like string beans and mixed green). We gathered to enjoy the food and had great conversation, which turned out to be a theme for the rest of the week.
